Ingredients

  1. 1 cup foxtail millet, washed and soaked for 30 minutes
  2. 2 cups mixed vegetables (carrots, peas, beans), finely chopped
  3. 1 large onion, thinly sliced
  4. 1 medium-sized tomato, diced
  5. 2 green chilies, finely chopped
  6. 1/4 cup cashews, lightly roasted
  7. 2 tablespoons ghee or vegetable oil
  8. 1 teaspoon cumin seeds
  9. 1 cinnamon stick
  10. 4-5 cloves
  11. 2-3 green cardamom pods
  12. 1 bay leaf
  13. 1 teaspoon ginger-garlic paste
  14. 1/2 teaspoon turmeric powder
  15. 1 teaspoon garam masala
  16. Salt to taste
  17. Fresh coriander leaves for garnish

Instructions

  1. Saute the Aromatics:
    • In a large pan, heat ghee or oil. Add cumin seeds, cinnamon stick, cloves, green cardamom pods, and bay leaf. Let them sizzle and release their aroma.
  2. Create the Flavor Base:
    • Add thinly sliced onions and green chilies. Saute until the onions turn golden brown. Stir in ginger-garlic paste and cook until the raw aroma dissipates.
  3. Incorporate Vegetables:
    • Add the mixed vegetables and diced tomatoes. Cook until the vegetables are slightly tender yet retain their crunch.
  4. Spice it Up:
    • Sprinkle turmeric powder, garam masala, and salt over the vegetable mixture. Stir well to coat the vegetables evenly with the aromatic spices.
  5. Add Foxtail Millet:
    • Drain the soaked foxtail millet and add it to the pan. Stir gently to combine the millet with the vegetable-spice mixture.
  6. Cook to Perfection:
    • Pour in 2 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pan, and let it simmer until the millet is cooked and has absorbed all the flavors.
  7. Garnish and Serve:
    • Once the foxtail millet is cooked, fluff it gently with a fork. Garnish the pulao with roasted cashews and fresh coriander leaves.
