  6. 2 tablespoons ginger-garlic paste
  7. 1 tablespoon poppy seeds
  8. 1 tablespoon fennel seeds
  9. 1 tablespoon coriander powder
  10. 1 tablespoon cumin powder
  11. 1 tablespoon red chili powder (adjust to taste)
  12. 1 tablespoon turmeric powder
  13. 1 tablespoon black pepper powder
  14. 4-5 green cardamom pods
  15. 2-3 cloves
  16. 2-inch cinnamon stick
  17. 1 bay leaf
  18. Curry leaves for flavor
  19. Salt to taste
  20. Fresh coriander leaves for garnish

Instructions

  1. Prepare the spice paste:
    • In a dry pan, roast grated coconut, poppy seeds, and fennel seeds until they release their aroma. Grind this mixture into a smooth paste using a little water.
  2. Marinate the meat:
    • In a large bowl, combine the goat meat with ginger-garlic paste, coriander powder, cumin powder, red chili powder, turmeric powder, black pepper powder, and salt. Allow it to marinate for at least 30 minutes to let the flavors meld.
  3. Sear the meat:
    • Heat gingelly oil in a heavy-bottomed pan. Add the marinated meat and sear until browned on all sides. Remove the meat and set it aside.
  4. Saute aromatics:
    • In the same pan, add more oil if needed. Add chopped onions, bay leaf, green cardamom pods, cloves, and cinnamon stick. Saute until the onions turn golden brown.
  5. Introduce tomatoes:
    • Add chopped tomatoes to the pan and cook until they soften and the oil begins to separate.
  6. Create the curry base:
    • Incorporate the ground spice paste into the pan, stirring well to coat the ingredients. Cook until the mixture forms a thick, flavorful base.
  7. Simmer with goat meat:
    • Return the seared goat meat to the pan. Pour in enough water to cover the meat and bring the curry to a boil. Reduce the heat, cover, and simmer until the meat is tender and the flavors have infused.
